Baking & Troubleshooting

1) My oven doesn’t get hot enough — what should I do?

Preheat longer on the middle rack. Use a smaller pan to help the center set. Add time in 3–5 min steps and watch for doneness cues (edges are brown).

For an easy fix, try our Brownie-in-a-Bowl mix (cooked in a microwave) or Rice Krispy Treat mix (cooked on a stove).

2) I don’t have a pan — what can I use?

If you don’t have a sheet pan handy, you can use anything that is oven-safe (typically made out of metal/stainless or glass. That can be a cooking pan or pot.

3) How do I bake only a partial batch?

Measure the portion of dry mix you want, add the same proportion of water (e.g., half mix → half water). Bake at the same temperature; check a few minutes earlier. Reseal and store the rest.

4) Brownies don't have a shiny, crackly top.

Whisk the mix + water 30–45 seconds until glossy (dissolves sugars), don’t add extra water, and use a metal pan on the middle rack. Bake until edges set and the center shows moist crumbs on a toothpick; cool 10–15 min to let the crust set.

5) High altitude adjustments (3,500+ ft).

Add 1–2 tsp extra water; increase oven temp 15–25°F; check 2–5 min earlier. Avoid dark pans if possible.

6) Brownie-in-a-Mug didn’t set / turned rubbery.

Use a microwave-safe mug and fill it no more than halfway. Stir mix with water to a thick, smooth batter. Microwave ~45–60s for 1100W, 60–75s for 900W, 75–95s for 700W, then finish in 5–10s bursts until edges set and the center stays glossy-fudgy. Let stand 1–2 minutes to firm.

If it’s rubbery, it was overcooked or too much water—next time, shorter bursts and a slightly thicker batter. Careful: mug will be hot.
